Thats for that, I appreciate that it can be a bit convoluted as its not supposed to fit together but I figure I'd give the Fox X-men franchise (including shows) one last victory tour
I mean.... originally it was because it was because Quicksilver in Wandavision was oBvIOusLy gonna make Fox X-men part of the MCU multiverse, but I guess I don't have to worry about that now

Okay. I disagree with changing Deadpool's timeline, but it's up to you of course!
You missed the Wade kills Weapon XI timeline. I'd imagine that would be the same date as the original timeline, too. The Marvel Appendix describes Earth-18315 (Dead XMOW Wade) as a divergent timeline to Earth-10005 (Original Timeline).

There's another thing that they do that sounds kinda terrible to me. Apparently Wanda is supposed to snap his neck according to the original source, who claimed that they were only told of an early version of the script.
Now, if that actually happens, it can't be the Fox Xavier because of the events of Logan. The only way it could work as the same is to say it's an alternate branch established in Deadpool 2, otherwise it's a random variant. In the later, I guess it doesn't affect X-Men.
Would rather no Xavier especially if he's gonna die in a cameo like that.

If that is the case, I guess it could be a post-Deadpool 2 timeline? I mean Cable returning to the past seemed to have altered the future, and then Deadpool just creates a whole mess of timelines with his meddling (that being said, I've never seen Deadpool 2 as being "fully" canonical, given its tongue in cheek nature and frequent 4th wall breaks, but that's just me)
