That's only because he refuses to go forward with it, as I recall Toph and Katara teaching him didn't take that long, and he showed he got the basics its just a matter of practice not teaching

I think they could extend beyond the third season, just wrap up this story and start a new journey. Depends on how they want to continue it

The episode was fun. The 'weakest' episode yet, but just like HIMYM, it was still enjoyable.
