Given that we don't know when Agents of S.H.I.E.L.D. 5x13 takes place, though the MCU wiki claims that there's an out of focus December 16 date, wouldn't it makes more sense after Runaways 1x05 or 1x06?

What is the source of this rumour? Looks awesome if true, but hard to believe they managed to time it so there is usually only around a week between releases

It is likely what we are getting. First time we get a year that crowded with MCU proper content. We only had MCU content like that in 2017.
 
The What If...? series will be canon? I thought it was alternative MCU stories (so non-canon)?

Exactly. Alternate MCU stories. Alternate universes that are parallel to Earth-199999's timeline.

That makes them just as MCU as Loki.

So a question: all the episodes of What If...? would be in the same parallel universe or one episode = one parallel universe (so 10 parallel universes for the first season)?

We don't know for sure yet, but if every episode highlights a different "what if", I would say it's 10 different universes.

Using MCU logic, What If...? are not parallel universes, but alternate ones. The MCU treats both differently.
