Note:
This Earth is weird. The various games can't decide if the Marvel and Capcom worlds are the same or two parallel worlds that merge temporarily. Additionally, like the Street Fighter games, the Arcade modes have one ending for every character, with the heroes winning the tournament or whatever and the villains usually take over the world in their endings, so obviously there are contradicting endings. Also some version of the Capcom represented games happens in the universe, but the timeline is a mess. Also Spider-Man of this world was killed by Morlun in Spider-Verse but he got better by the events of MvC 4. Nick Fury also changes races between games like its Earth-6109 counterpart (However the Marvel Wiki says that according to articles the 3rd Ultimate Alliance game is an alternate universe. Also could be that he is Nick Fury Jr like in the 616 universe)

Timeline Reasoning
Resident Evil 0:
It starts the day before 1 and ends the same day that 1 begins, in the morning. Umbrella Chronicles reveals that it was July 23th and July 24th.
Resident Evil (2002 Remake):
Umbrella Chronicles references this, and overall the remake includes everything the original had and more, so, it's usually considered to take preference in canon over 1. Later games reference the 2 paths and all four survivors are alive, so there is no way to reconcile it, a mix of the 2 paths is what canonically happened. The game states July, but Umbrella Chronicles specifies that it was July 24th, so, the second half must take place in July 25th, since morning is shown in the last cutscenes.

Resident Evil (2002 Remake):
This usually considered canon over original Resident Evil because Umbrella Chronicles references this, and overall the remake includes everything the original had and more, so, it's the most complete version anyway. By the way, both the original and the remake let you choose to play as Chris or Jill, but their stories are contradictory and later games refer to both stories as canon, so the canon events of the first game are a mix between the 2 stories. I suggest playing both stories. I don't have any recommendations on which one you should play first.
Resident Evil 2 (Original):
Like last game this one has 2 characters but now there is an addition: there are two characters, Leon and Claire, and at the start of the game they split up, each choosing a different path. If you choose Leon you have one path and after you finish it you can play Claire on the other path BUT if you choose Claire first, you can play Claire on the first, not the second path and Leon on the second. So, there are like 2 "universes", each with one character in the first path and the other in the second, the first path is usually called A and the other B, so there are 4 paths: Leon A, Claire A, Leon B and Claire B, with Claire A and Leon B being one universe and Leon A and Claire B being the other one. Has an unlockable extra mode called "The Fourth Survivor" where you play as an extra character, which lasts about 10 minutes. There are more additional modes in the remake that are not canon, they are like "What If" Marvel stories that show what would happen if the stories had a slightly different turn. There is also another additional mode that is unlocked after finishing "The 4th Survivor" that is an alternate version of it but not canon for reasons that will become clear once you play it.
Resident Evil 0:
This game was released after Code Veronica and around the same time of the Remake of 1. It is a prequel of 1 but I would recommend playing after at least 2 since it spoils one twist of 1/Remake and also contains a character of 2. Technically its intro cutscene narration mentions Resident Evil CODE Veronica and Resident Evil Gun Survivor, but they are just name dropped, not really spoiled.
Resident Evil 3: Nemesis
This game actually starts before 2 and ends after 2 but I would recommend playing it after 2, at least in your first time.
Resident Evil Survivor:
First Resident Evil spin-off. It has never been referenced again after Resident Evil 0's intro cutscene.
Resident Evil Code Veronica X:
Resident Evil Code Veronica X is an updated release of Code Veronica for the Dreamcast. The release only adds a couple of cutscenes, so, you could play the original, though, obviously unless you found a used copy, you can't buy it in 2023. This is the only "main" game that is not in Steam, sadly. Code Veronica X was available in PS2. It was re-released in PS3 and Xbox360 and the XBox360 is also available for Xbox One via backwards compatibility.There are 2 version available for PS4: The version you can buy, that is exactly the same as the PS2 version and the version in PS Plus Premium that is the PS3 version. Careful if you live in PAL regions, since the PS2 version has the typical problem of old games that run at 5/6 the speed of NTSC versions, and the PS4 version is the same as the one released in the respective territories, so if you buy the game in the UK store for example, it would be the slower version, but, thankfully, the PS3/PSPlus Premium version have the american speed in all territories and you can buy the American PS2 version if you buy the game in the American PS Store with another account and you can even install the game and switch to your main account so you can actually earn trophies there.
Resident Evil Survivor 2: Code Veronica:
OK, so, this one is a retelling of Code Veronica but in the gameplay of Survivor. It really doesn't add anything to the plot and while technically canon is as important as if it wasn't since the final twist of the game is that it was all a nightmare that Claire has at the ending of Code Veronica
Resident Evil: The Darkside Chronicles:
This game follows the formula of Umbrella Chronicles that was released earlier but takes place later. It is more like a prequel of Resident Evil 4 and sequel to Code Veronica. Even if this game and Umbrella Chronicles were released after 4 I would recommend playing them before it if you are going to. This game (and Umbrella Chronicles) have the same structure: the main plot happens in the position that I have post here but the bulk of the game are flashbacks of the main character to the events of 0, 1 (Remake) and 3 in Umbrella Chronicles and 2 and Code Veronica in Darkside Chronicles. There are both chapters that retell the events of the original games and chapters that reveal totally new events between those of previous games.
Resident Evil Dead Aim:
I have not played it, so I will add information in the future.
Resident Evil: The Umbrella Chronicles:
Everything that needed to be said is already covered in the Darkside Chronicles part.
Resident Evil 4 (Original)
It has an extra chapter called "Separate Ways" included in all versions except the original GameCube version. Is called nowadays "Resident Evil 4 (2005)" to differentiate it from the original. The "Resident Evil 4 HD Project" is recommended since it fixes little things like textures that were missing in the process of porting from one console to another. Seriously, it looks so much better with the mod.
Resident Evil Revelations:
Released between 5 and 6, but set between 4 and 5, I don't see any problem with playing it between 4 and 5 even in your first time.
Resident Evil 5 Gold:
The Gold release includes the main game and the DLC Untold Stories that in turn includes Lost in Nightmares and Desperate Escape. Desperate Escape happens at the same time as the final levels so I would play it after them. Lost in Nightmares is a strange case. It happens 2 years before the events of the main game and I would recommend playing it before but the thing is... you can't. Even if you already bought the DLC, you need to unlock it playing the main game until the part the main character has flashbacks to its events and then after finishing that chapter you unlock the extra episode. But I think that narratively speaking, not only playing it before wouldn't damage the plot, It actually would make more sense if the extra chapter was the prologue! But anyways…
Resident Evil Revelations 2:
Released after 6 but set before it, it is not really much connected with 6 or even Revelations 1, to be honest, but still a OK game. It has 2 sets of levels: The Claire and Moira episodes and the Barry and Natalia episodes that take place later (I put an spoiler tag because that is supposed to be an spoiler).
Resident Evil the Marhawa Desire:
Manga prequel to Resident Evil 6. It is not essential to read it before 6, but is the game the manga is most connected to.
Resident Evil 6:
Ada story is the one you are supposed to play the last.
Umbrella Corps:
I can't recommend this game. It is a 3rd person shooter that takes place in the Resident Evil universe and it is multiplayer oriented, that is why its single player mode sucks. It just feels so boring. Technically is canon, but is events hasn't been referenced so far.
Resident Evil 7 Gold Edition:
It has multiple DLCs that happen before and after the game, but in your first time I would just play the main game and then play the DLCs. By the way, the "Resident Evil 7 Teaser: Beginning Hour" has an actually different tiny plot that happens before the main game and since it is free and like 10 minutes long we could actually spend more time debating if it is canon that you would spend playing it so, play it before the main game. The PS VR exclusive "KITCHEN" demo has a plot that is actually happening before to the other demo, so if you have a PSVR set you can also play that one before Beginning Hour.
Remembering Resident Evil 7
Resident Evil Village Gold Edition:
Like 7, it has a PlayStation demo that has a little plot before the events of the game, but this time, instead of being a VR exclusive, it's a PS5 exclusive. Shadows of Rose takes place 16 years after the main game.

They are starred by a Tofu with the same "S.T.A.R.S." beret that Jill wears. Still I wouldn't consider it an alternate take of the 4th Survivor because even if it is a universe inhabited by sentinent tofu they are some weird things like, why the tofu is dressed as Jill instead of Hunk but the helicopter pilot still calls him "Mr. Death" or most important, why the zombies are human zombies instead of tofu zombies? It could be all explained as being a very bizarre universe inhabited by tofu were the events lead to a tofu S.T.A.R.S. police office nicknamed "Mr. Death" that speaks in Japanese stuck in the sewers fighting zombies (and the virus zombie not only zombiefies the tofus, but transforms them in humans in the process???), but it is just so weird (and in the case of the alternate tofus in the Remake there are some tofus that are female but their nickname is still "Mr. Death")

They are some non-canon modes were your goal is to kill the bigger amount of zombies possible in a given time. The original one in Resident Evil 3 had a very minimal plot but not canon, while the rest just don't have a plot. Resident Evil: The Mercenaries 3D is just an entire game around that, with no plot.

As pointed out at a different point in this thread the writer was bold enough to fabricate a backstory for the T-Virus in the first novels, but sadly for her the next games revealed a completely different backstory for it and she adapted it in the Zero novel, so, maybe the universe has 2 different variations.

Anderson/DeCandido/Shirley/Waggoner (Original Live-Action Movies) - Added
Similarly to the Transformers live action movies this movies present retcon after retcon that if put together reveals that events doesn't really make much sense. First novelizations of the movies I have considered the same as the movie universe but once I watch the movies and read the novelizations I will see if they can be considered the same. Novelization of the 5th movie by a different author of the first 3 movie novelizations, according to the wiki is an amalgam of Anderson and Decandido. Sorry 4th movie, you got no novelization. I am going to make an experiment, but don't take this seriously:
there is a certain "order" in Resident Evil 2 Remake about which parts take place before others.
-Leon frees the dogs in the basement (and they are not lickers around) but when Claire arrives at the basement the dogs are all dead and the lickers are loose, suggesting they arrived later and killed the dogs, so Claire visit to the basement is later.
-When characters arrive to the licker room with the one-way mirror, in one character side the mirror is broken and in other side the licker breaks the mirror.
-When Leon goes down the stairs, he breaks them, suggesting that he goes there after Claire, since the stairs are OK in Claire's side.
-When Claire and Leon go for the G-Vaccine and the G-Virus sample, respectively, there is also a hint about who goes there first, but I don't remember which one was first.
